The Blue Cake Company specializes in fun, whimsical, and contemporary special occasion cakes and other desserts.
We are a scratch bakery. This means we make everything from scratch and in-house with no preservatives and quality ingredients. It also means we must bake fresh every day and refrigerate our cakes to help keep the ingredients, such as mousses, custards, fruit, and other homemade fillings, fresh. Cold cakes are more firm and do not release the true flavor of the cakes. Please bring to room temperature before serving.
Because we bake from scratch, there may be slight variances in our products. Please let us know if these are on the negative or positive side. We care what you think.
Cake Care:
For cakes without mousses and fruits, store at a cool room temperature in a covered box or container. Our cakes can sit at room temperature for 3 days or refrigerated for a week. If you refrigerate your cake, you may want to let it sit at room temperature for at least an hour.
For mousse or fruit filled cakes, store in your refrigerator and let sit 30-40 minutes before serving. For best results, comsume within 3-4 days.
Tiered Cakes: Tiered cakes travel best in a flat, level position. Please make sure you have room in your vehicle for pick-up. Most cakes will fit on your front floorboard. Larger cakes may need to travel in your trunk. If you are really nervous, bring someone with you to hold the cake in their lap. And of course, drive carefully and avoid slamming your brakes!
If you will be travelling with your tiered cake, let us know, so we can properly prepare your cake for travel. Our tiered cakes are usually packed in an open box. We can place plastic wrap over the box on request. For easier handling, we suggest keeping your tiered cake chilled if you will be serving it the next day. Tiered cakes take longer to warm up, so let sit at least 2 hours before serving, 1 hour if it is a mousse cake.
note: Tiered cakes do not have to be refrigerated (except fruit and mousse cakes) if you don’t have the space available. Just keep in a cool spot, away from the sun.
ENJOY!
The Lewandowski’s
Steve and Jan Lewandowski both trained at the Scottsdale Culinary Institute in Arizona, where we discovered our love for confectionery arts (and each other!.) We have continued our training through cake classes, seminars with top pastry chefs, and years of hands-on experience.
The Blue Cake Company was created so we can work together and make cakes that are unique, memorable and delicious.
